The only difference that we have from your instructions is that we place in canning jars once the fermentation process is at the right consistency. Then we eat kraut all year long. Dad has a 50 gallon ceramic crock and that makes about a years worth of kraut the way my family eats it. Wonderful instructions. My family has made sauerkraut as long as I remember and before…long family tradition. I am playing with OpenPhoto at <a href="http://p.f8t.me" rel="nofollow">a test site</a>, and so far the thing I miss most is the bigger sized versions, but I am sure that can be hacked in. Like you, I was a paying pro member since 2004. But it was just making me too sad to continue using it. I don't know what I'm going to do now, but at least it seems a weight has been lifted.
