A good chef checks before sending if they don&#039;t trust their cooks but, yes, you&#039;re right - some places are abysmal about quality control.

I once sent a steak back that was overcooked. The server went &quot;how do you know, you haven&#039;t even cut into it&quot; and I responded with &quot;I can feel it. And if I can feel it your cooks should too.&quot; Someone pulled my chit on that night and six days later I had a job offer I couldn&#039;t refuse :)</description>

I can&#039;t believe the number of times I&#039;ve received a steak not cooked to the desired doneness.  And this sometimes happens at a steakhouse.  There&#039;s a guy in the back who cooks steaks for a living, day in and day out.  How can he not get it right?  Is he not paying attention?  Too much to do?  Doesn&#039;t give a crap?  Are they hiring prison parolees?  All kinds of things make me gasp in wonder at the high error rate.</description>
